Now that we're deep into winter, it's the ideal time to discuss some of the best options to warm yourself up with. Here are the very best of the best noodles that PDX has to offer.
Portland's geographic location on the West Coast makes it a logical choice as a showcase for delicious bowls of Asian noodles, whether you're talking about ramen, pho, udon, or even hot pot. We took it upon ourselves to create a list of the most scrumptious noodles in Portland. Let's get to slurping.
Cedar Mill
You can choose from up to 12 varieties of ramen at this Beaverton location of the popular Japan-based franchise. We haven't tried all twelve quite yet, but what we have tried has been absolutely fantastic. Vegetarians rejoice - the veggie ramen option here is a highlight.

Buckman Neighborhood
Offering ramen from Chef Mayumi in a counter-service setting, Kinboshi is where you want to go if you're on the search for traditional, Tokyo-style noodles. Seriously, you'll enjoy some of the best tonkotsu broth you've ever had here - there's a reason Kinbishi reputation rests so high amongst noodle enthusiasts across the city. Bonus points for the Tebasaki Chicken Wings, which are a perfect complement to the ramen.

Healthy eaters on the lookout for tasty ramen need look no further than Kayo's Ramen Bar. Almost all of the noodle bowls here are available in vegetarian and/or vegan form, including the popular maya dish, made with Sichuan peppercorns and dried chili peppers. No-carb options are also available.

Central Eastside
The owners of Afuri Izakaya were diligent in the search for the best new location for their Tokyo based ramen house. The most important aspect for them was access to locally, pure sourced water. Lucky for us, they found that in Mount Hood. Afuri are experts at their craft, creating an elegant ambience for mid-tier prices. I recommend the Miso Cashew Dumplings to start!

Downtown
Hipsters and pho-experts alike converge upon Luc Lac, the fun, colorful 2nd Ave shop that churns out bowls of all the old favorites - think brisket, tendon, meatballs, etc. In particular, we find the broth here to be some of the most complex and favorable we've tried anywhere (and we've tried 'em all.)

Montavilla Neighborhood
With an unassuming layout and an expansive menu, Hanoi Kitchen has people talking. Their options span from meat heavy dishes like the Pho Ha Noi (brisket, steak, meatball and tripe) to the vegetarian friendly Pho Sam Chay (homemade vegan ginseng pho broth with tofu, bean curd and vegetables.)

This Vietnamese eatery serves all the hits - vermicelli bowls, salad rolls, pho and banh mi sandwiches. With a small dining room and outdoor picnic benches, XinhXinh creates an intimate setting with distinguishing options like the BBQ Tork, a play on the classic pork go-to. They also serve boba tea as well as the usual suspect - thai iced tea (vegan option available.) Don't skip out on the sesame balls, of course.
